Celebrity pitmaster Ali Clem to introduce Texas BBQ in Glasgow
This summer, the people of Glasgow will have the opportunity to savor the authentic flavors of Texas barbecue, thanks to the arrival of Michelin-star pitmaster Ali Clem. As the head of la Barbecue in Austin, Texas, Ali Clem will be showcasing her family’s renowned smoked meats at the Meatopia On-Fire festival in Glasgow’s SWG3 from June 12 to 14.
In a statement, Clem expressed her enthusiasm for bringing the essence of la Barbecue to Glasgow and assured attendees that they can expect brisket that rivals the taste of the meats cooked on their pits in East Cesar Chavez, despite the distance. She emphasized her preference for hot and fast cooking methods, emphasizing the importance of reading fire cues and achieving a perfectly charred exterior, rendered fat cap, and cohesive meat slices through attentive cooking rather than continuous monitoring.
Clem’s approach to barbecue reflects the traditions instilled by her late wife LeAnn Mueller’s family, renowned for their role in shaping Texas-style barbecue. The Mueller family’s journey began in 1949 with Louie Mueller’s iconic barbecue joint in Taylor, Texas, known as the “cathedral of smoke.” With a dedication to Central Texas-style smoked meats cooked over post-oak wood in large pits, Ali Clem and her in-laws honor these techniques nearly eight decades later.
The pitmaster also commended Scottish cuisine for its emphasis on respecting ingredients and simplicity, noting similarities with the principles of good barbecue. She highlighted the importance of working with the land’s offerings, honoring the animal, and allowing culinary technique to enhance flavors without the need for overcomplication.
